Recipe(tried): Scallop or Shrimp Kabobs

Scallop or Shrimp Kabobs

1 lb. scallops or shrimp
1 can pineapple chunks
1, 4oz. can button mushrooms, drained
1 green pepper, cut into 1 inch squares
1/4 c. canola oil
1/4 c. freshly squeezed lemon juice
1/4 c. fresh parsley, minced
1/4 c. soy sauce
1/2 tsp. salt
pepper to taste
12 slices of bacon
Onion and cherry tomatoes may also be used (optional)

Put scallops or shrimp, pineapple, mushrooms and green pepper in bowl (onion and cherry peppers, if using). Make a sauce of oil, lemon juice, parsley, soy sauce, salt and pepper and pour over mixture in bowl. Let stand for 30 minutes, mixing occasionally. Fry (or nuke) bacon until cooked about halfway through, but not crisp, and cut each slice in half. Skewer scallops or shrimp, pineapple, green pepper, mushrooms and bacon. Repeat until skewers are full. Cook about 4 inches from coals for 5 minutes, turn and cook 5 more minutes, basting with sauce until bacon is crisp. (You may want to partially cook the green pepper and the onion if used). Serve with rice.
