Grilled Onion Flowers with Bacon

I have a wonderful way to make onions on the grill. It's definately not low fat! But they are sooooooo goooooood!! Let me see if I can describe it.

Take one whole large vadalia (sp?) onion, peel skin and cut off both ends.

Core out the center about an inch in diameter (don't go all the way to the bottom of the onion).

Slice the onion down twice so you have four wedges (again don't go all the way to the bottom of the onion) It will look kind of flower-like.

Take 2-3 Tbsp. of margarine and stuff in the middle of the onion that you've cored out. Hold the onion together so it doesn't break apart.

Take one slice of bacon and cut in half. Lay one one way across the top of the onion, and the other criss-cross across the onion.

Then set the onion on aluminum foil and bring the wrap up and close it. I usually wrap it twice to keep the melted butter in there good.

Place on the grill for 45 min. to an hour on low or med. low heat.

That's it. My husband ALWAYS make these whenever we're grilling steaks.

When the onion's finished, it'll fall apart and the melted butter and bacon are great to dip your steak in! Like I said, it's not low-fat. But once a month can't be that bad!
