Recipe(tried): Pork Chops with Italian Relish

Main Dishes - Pork, Ham
Made these last weekend and both my hub and I loved them:

Pork Chops w/ Italian Relish

4 center cut pork chops
2 lg. plum tomatoes, or the like, chopped well
3/4 c. red onion, chopped
1 t. oregano
1 t. basil
1 t. minced garlic
s & p to taste
1/4 c. red wine vinegar
2 T. olive oil

Combine last 8 ingredients well. Allow to sit and marinate for at least 30 min. Rinse chops and place in a shallow dish/bowl. Drain juice from relish and let chops marinate in that for at least 30 min-1 hr. Grill pork chops until done and serve relish on top. Delish!!

When I made this, I only did 2 chops so we used the leftover relish as 'topping' for our salad - was really good!
