Recipe(tried): Scallops with Bacon - June...

I buy the dry Sea scallops at Captain Jerry's Seafood Market in Naples. I squeeze lemon juice over them. Let them set while I cut center cut bacon in half and put in the oven to cook about half done. Then put the bacon around the scallops, secure with a toothpick, put in grill basket and cook the scallops on the grill for about 10 minutes. If you don't pre cook the bacon in the oven it dosen't seem to cook evenly on the grill and does not cook done and crispy.) The bacon is very lean and dosen't have much fat. It is the only bacon I use. All the clams I have purchased in this area are so tough I have given up on them.(although I really like clams) I know that they must be different when you dig them fresh, and I'm sure you will be able to do that again this year. Just omit the butter and use lemon juice instead and after a while you will get use to "NO BUTTER" Also the same with fish. I rub it with olive oil and lemon juice, season with very little salt, more pepper and put in grill basket and grill.I can easily live on sea food and chicken, but mostly vegetables, and fruite. I have never liked meat and very seldom eat it. I belong to a gym and work out at least 3 times a week, so does my husband. This has helped us with our "old age aches and pains" and helped us in ever aspect of preventive health.
