SEATTLE LATTE BROWNIES
6 squares unsweetened baking chocolate
1 1/2 sticks butter or margarine
1/4 cup water
1 tablespoon instant coffee
1 cup sugar
1 cup light brown sugar, firmly packed
3 eggs
1 teaspoon vanilla
1 1/4 cups flour
1/2 cup crushed almonds
1/4 teaspoon cinnamon
1/4 teaspoon salt
Powdered sugar (optional)
Preheat oven to 350 degrees F (325-degrees for glass baking dish). Grease and foil-line a 8-inch or 9-inch square baking pan.
Microwave chocolate, butter, water and instant coffee in large microwavable bowl on High for 2 minutes or until butter is melted. Stir until chocolate is completely melted.
Beat in sugars with electric mixer on medium speed until well blended. Add eggs and vanilla; beat 2 minutes. Add flour, almonds, cinnamon and salt; beat until blended well. Spread batter in prepared baking pan.
Bake 35 to 40 minutes or until toothpick inserted in center comes out with fudgy crumbs. If using 8x8-inch pan, bake 50-55 minutes. Do not overbake. Cool in pan.
Cut into squares. Sprinkle with powdered sugar, if desired.
Makes 16 fudgy brownies
