Recipe(tried): Seppo.....Butternut Risotto

Side Dishes - Rice, Grains

Here is another butternut rec for you,it can be used as a side or main dish,its
rich creamy and deliciuos!!!!!!!!very much comfort food,Its getting chilly here
in Joburg a sure sign winter is on its way!!!!!!

BUTTERNUT RISOTTO
*******************
1/3 cup butter
1 large onion chopped
2 Lbs butternut,peeled,seeded and diced
1 1/2 cups risotto rice
3 1/2 cups veggie stock(kept hot and simmering on stove)
salt and freshly ground pepper to taste
2 Tbls fresh coriander,finely chopped
3 Tbls thin cream
Parmesan cheese to serve

Saute onion and butternut in heated butterfor 10 mins,add rice and cook gently
til rice is well coated and just turning translucent add 1 cup stock and stir
til absorbed,add a little stock at a time tilmixture is a thick soupy sort of
state and rice is tender,about 20-25 mins.Stir in coriander and cream,season to
taste and serve with shavings of parmesan.

This is the sort of thing I can eat bowls of!!!!!!
Hope all is going well with the book,the children are all back at school so its
back to being Mom,s taxi and Pit stop!!!!!!
