Recipe: She Crab Soup

Here's one I found after enjoying that delicious soup in Savannah. It's out of a cookbook called The Taste of Florida which is a sampling of some of our local restaurant recipes. This one is from Captain Anderson's in Panama City.

She-Crab Soup

1 T. butter
1 t. grated onion
2 c. crab meat and coral eggs (crab roe)
3 1/2 c. whole milk
1 t. worcestershire sauce
1 T. flour
1/2 tsp. Accent
pinch nutmeg
6 T. sherry

Put butter, onion, crab meat and eggs in top of a double boiler and simmer for 5 min.

In a separate bowl, combine 1/2 c. milk, worcestershire, flour, nutmeg and s & p to taste and stir well. Heat the remaining milk and add to the milk and flour mixture. Add this to crab mixture in the double boiler and slowly cook for 30 min. Pour into bowls and add 1 T. of sherry to each bowl. If no coral eggs are available, grate yolks of 2 hard boiled eggs and add a t. to each bowl.
