Recipe: Layered Coleslaw with Citrus Dressing (using orange and lemon juice)

LAYERED COLESLAW

1 head red cabbage, shredded
1 sweet onion, sliced thinly
1 green bell pepper, sliced thinly
FOR THE DRESSING:
1/4 cup sugar
juice from 1 lemon
juice from 1 orange
1 tsp. salt
1/2 tsp. celery seed
1 tsp. dry mustard powder
1/2 cup canola oil

In large glass bowl, layer cabbage, onion and green pepper.

Combine remaining ingredients in small glass jar, shake and mix well. Pour over vegetables but do not mix or toss. Cover and refrigerate overnight.

Just before serving, toss well.

Makes 8 servings
