Recipe(tried): Shrimp on the Barbie

Main Dishes - Fish, Shellfish
Yum, our tiger shrimp are running, thanks for the reminder... here's my favorite:

SHRIMP ON THE BARBIE

1 1/2 lb. medium-large shrimp, unpeeled
1 stick (1/2 cup) butter, melted
1/4 cup olive oil
1/4 cup mixed herbs (parsley, thyme and cilantro)
3 Tbsp fresh lemon juice
3 large garlic cloves, crushed
1 Tbsp minced shallots
salt and pepper to taste

Combine first 8 ingredients in large bowl. Mix in shrimp. Marinate at room temperature for 1 hour or in refrigerator for 5 hours, stirring occasionally.

Prepare barbie.. when coals are medium-hot shrimp is ready to bbq.

Thread shrimp on skewers and bbq until they turn opaque, about 2 minutes per side.

I serve with lemon wedges and a variety of dipping sauces. The ranch sauce also sounds good.

8 servings
Enjoy, the weather is perfect up here in Alaska
