SEA COAST CASSEROLE
1/4 cup butter or regular margarine
1/4 cup unbleached flour
2 1/2 cups milk
1 teaspoon salt
Dash ground black pepper
1 1/2 cups shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
1 (2 1/2 oz) can mushrooms, drained
1/4 cup pimento, chopped
1 lb fish fillets, cooked, flaked
Hot cooked rice (for serving)
Make a white sauce with the butter, flour, milk and seasonings. Add the cheeses and stir until they are melted.
Stir in the mushrooms and pimento. Gently stir in the flaked fish and heat through.
Serve over the hot rice and garnish with parsley, if desired.
Makes 6 servings
