Recipe(tried): Simple French Bread from Joy of Cooking - Baguettes Tip

I never could make the baguettes turn out right. Burned on the outside and uncooked in the middle. So I cut the dough into 14 - 16 pieces, let them rise 10 minutes or so on the cookie sheets, baked them on the higher temp for about 8 minutes, brushed the egg white wash on and baked another 8 minutes at the lower temp and they turned out perfectly! A handy sized roll for each person.
