Recipe(tried): Slicks
Misc.My grandmother lived in the Ozark region of Missouri when she was much younger
and my dad was a small child. They always called these "slicks" in that region
instead of dumplings. I have found them once or twice in cookbooks from the
Ozark region. By any name they are good. Hope these are what you are looking
for.
Slicks:
Have chicken broth boiling. Dip off 1 cup of broth and slowly add to 2 cups
flour, stirring it into the flour with a fork. There is no need to add more
flour. Using a small amount of dough at a time, roll each piece as thin as pie
crust. Cut into strips (I cut into about 1 1/2 inch squares), and drop into
boiling broth. Cover the pan. Gently shake the pan to separate the strips as
they cook. Do not stir. Cook for 15 minutes, gently shaking pan several times
during the cooking time. This dough will have an odd "spongy" feel to it.
