we went to Wilson county North Carolina this week. we stopped , by chance, at a place called Bill Ellis bbq.
we had the buffet. and on the buffet was , what I thought , was chicken and dumplings.....i went back for 3rds....they were that good. I could not figure out the "noodles" I say noodles cause they were almost square and paper thin...lots of black pepper. I can't get that wonderful taste out of my mouth. I have looked around and had never heard the term "slicks". a friend shared this recipe with me....
1 tbsp. (heaping) shortening
1 tsp. salt
Water to make dough (about 1/2 cup)
1 cup flour
Mix flour and salt. Blend in shortening and add water to make soft dough. Roll out 1/4 inch thick. Cut into 2 1/2 inch squares. Lay squares on floured paper or board. Bring chicken broth to full boil. Drop slicks (dumplings) into broth. Always keep broth boiling so they won't stick together. Cook until slicks are done (about 20 minutes).
I am going to try it this week.

I also had to buy some of their bbq sauce...for both the pork and the chicken. North Carolina bbq is different than any other.....
