SLIM PESTO SAUCE
3/4 cup chicken broth, skimmed of fat
1/2 cup fresh basil leaves, loosely packed
3 cloves garlic peeled
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
Heat broth to boiling.
Combine all ingredients in an electric blender or food processor; process until basil and garlic are minced (or use a mortar and pestle to mash basil and garlic together, then mix with remaining ingredients.)
Serve tossed with hot cooked pasta.
