Recipe: Creamy Pesto Sauce (using ricotta cheese, no oil)

CREAMY PESTO SAUCE

1/2 cup part-skim ricotta cheese
1/2 cup fresh basil leaves, loosely packed
1/3 cup water
1/4 cup grated Parmesan cheese
3 cloves garlic, peeled
Dash ground white pepper
Salt and pepper to taste

Blend all the ingredients in an electric blender or food processor until smooth.

Serve tossed with hot cooked pasta.

Makes 4 servings, 75 calories per serving
