CILANTRO PASTA DOUGH
1 cup plus 2 tablespoons all-purpose flour, divided use
1/4 cup coarsely chopped fresh cilantro
1/4 teaspoon salt
1 beaten egg
4 teaspoons water
1 teaspoon olive oil or cooking oil
2 tablespoons all-purpose flour
Stir together 1 cup flour, cilantro, and salt in a medium mixing bowl. Make a well in the center of the mixture.
Combine egg, water, and olive oil in a small bowl. Add to flour mixture and mix well.
Sprinkle a flat surface with the remaining 2 tablespoons flour. Turn dough out onto the floured surface. Knead till dough is smooth and elastic (8 to 10 minutes). Cover and let rest 10 minutes.
Divide dough in half; shape each half into a ball. Roll and cut.
Cook in boiling salted water; drain.
Makes 1/2 pound
