Recipe: Sour Cream Vegetable Sauce/Zippy Vegetable Sauce

SOUR CREAM VEGETABLE SAUCE
1/3 c. butter or margarine
3/4 c. sour cream
2 tbsp. grated Parmesan cheese
2 tbsp. drained capers
1/2 tsp. dry mustard
Melt butter in a quart saucepan. Stir in remaining ingredients. Cook over low heat stirring constantly until heated. Serve over asparagus, green beans, broccoli or cauliflower. Yields 1 1/4 cups.

ZIPPY VEGETABLE SAUCE
1/2 c. mayonnaise
2 hard boiled eggs, chopped
1 1/2 tbsp. minced onion
1/2 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
1/8 tsp. garlic salt
1 to 2 drops Tabasco sauce
Combine ingredients; heat, stirring constantly, over low heat until hot. Pour over hot vegetables. (I.e., broccoli, zucchini, carrots and onion mixture, lima beans, green beans, peas, etc.) Or serve separately in sauce bowl.
