Recipe: Sour Milk Recipes

CHEESE-STEAK CASSEROLE
(Give Yourself 2 1/2 Hours)

1 1/2 lb. round steak, cut
into 1/2-inch strips
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. onion soup mix
4 oz. can mushrooms, undrained
1 c. water
1/2 c. buttermilk or sour
milk**
5 oz. Swiss cheese

Drop Biscuits:
1 c. flour (all-purpose)
1 1/2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/2 c. buttermilk or sour
milk**
3 Tbsp. cooking oil

Place meat in 8 or 9-inch square baking dish. Sprinkle
flour, salt and pepper over meat. Mix to coat meat with flour.
Bake at 350 degrees for 30 minutes. Remove from oven. Stir in onion
soup mix, mushrooms and water. Cover and bake 1 1/2 hours or
until meat is tender. Remove from oven. Set oven to 450 degrees.
Pour 1/2 cup buttermilk over meat. Place one layer Swiss
cheese over top. Drop biscuits by tablespoons onto meat
mixture. Cut remaining cheese in pieces; sprinkle over bis-
cuits. Bake at 450 degrees for 15 to 18 minutes.
Drop Biscuits: Combine flour, baking powder, soda and
salt in bowl. Mix with buttermilk and oil; stir until mois-
tened.

BRAN MUFFINS

2 Tbsp. shortening
1/3 c. sugar
1 c. sour milk
1 large Tbsp. molasses
1 egg
1 c. flour
1 tsp. baking soda
1 tsp. vanilla
1 c. all-bran
1/4 tsp. salt
1/2 c. raisins
1/2 c. nutmeats

Cream shortening, sugar and molasses. Add beaten egg.
Soak bran in 1 cup sour milk. (You can make sour milk by
adding 1 tablespoon vinegar or lemon juice to regular milk.)
Add vanilla and add bran-milk mixture, raisins and/or nuts.
Fold flour, baking soda and salt in very lightly. Leave a few
lumps in batter. Bake at 375 degrees for about 20 minutes.BANANA NUT BREAD

1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 c. flour
1 tsp. baking soda
5 Tbsp. sour milk
3 mashed bananas
1 c. nutmeats
1/2 tsp. salt
1 tsp. vanilla

Cream sugar and shortening. To sour milk add 1 teaspoon
vinegar and heat. Add eggs, flour, sour milk (dissolve baking
soda in sour milk), bananas, nutmeats, salt and vanilla in that
order. Bake for one hour or longer at 325 degrees.

GINGERBREAD

2 1/4 c. sifted flour
1 1/2 tsp. soda
1 tsp. salt
4 Tbsp. shortening, melted
2 tsp. ginger
1 c. molasses
1 c. sour milk

Sift dry ingredients together. Combine molasses and
sour milk. Add to flour mixture and stir only until smooth.
Add shortening. Pour into greased 8 x 8-inch pan. Bake at
350 degrees for 30 minutes. You may add 1 teaspoon vinegar to sweet
milk and substitute for sour milk.MASHED POTATO DOUGHNUTS

2 eggs, well beaten
4 Tbsp. butter
1 c. sugar (1 1/2 c. is
better)
1 c. cold mashed potatoes
1 tsp. baking powder
1 c. sour milk*
4 c. flour
3 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg

*To get sour milk, add 1 teaspoon dark vinegar to milk.
Beat eggs until light and fluffy in a mixing bowl. Add
melted butter and sugar; beat again. Stir in mashed potatoes
and sour milk. Add dry ingredients. Beat well. Roll out
1/2-inch thick. Cut with doughnut cutter. Fry in hot fat.
Dough is easier to handle if chilled. If you cut doughnuts and
allow to rest on table before frying, they will absorb less
fat. Have fat heated to 370 degrees before frying. You may keep
dough refrigerated and cook as needed so you'll have hot
doughnuts for breakfast. While doughnuts are hot, roll in
powdered sugar.

SOUR MILK CORNBREAD

1 c. cornmeal
1 c. flour
1 tsp. soda
1 tsp. salt
2 eggs
3 Tbsp. melted margarine
1 c. sour milk

Sift meal, flour, soda and salt together. Stir sifted
ingredients into sour milk. Add eggs and butter. Mix quickly.
Pour into 9-inch greased pan. Bake at 450 degrees for 30 minutes.

DUTCH APPLE BREAD

1/2 c. shortening
1 c. sugar
1 1/2 Tbsp. sour milk
1 tsp. vanilla
2 beaten eggs
1 c. chopped, peeled apples
2 c. flour
1/4 tsp. salt
1 tsp. soda (in sour milk)
1 tsp. orange or lemon extract
1 tsp. cinnamon

Mix ingredients in order listed (shortening, sugar, sour
milk, vanilla, eggs, apples, flour, salt, soda, orange or lemon
extract and cinnamon). Nuts, raisins or dates may be added, if
desired. Bake at 350 degrees for 1 hour. Makes 2 loaves.

CINNAMON BREAD

1/4 c. shortening
1 c. sugar
2 eggs
2 c. flour
1/2 tsp. salt
1/2 tsp. soda
1 tsp. baking powder
1 c. sour milk*
1 tsp. vanilla

Filling:
2 Tbsp. sugar
1 Tbsp. cinnamon

*You can sour milk by adding some white vinegar to good
milk and let sit for awhile.
Cream shortening and sugar. Add eggs, vanilla and sour
milk. Add sifted dry ingredients. Grease loaf pan, pour 1/2
of batter and sprinkle 1/2 of the filling mix over the batter.
Add the rest of the batter and cover with the remaining fill-
ing. Bake at 375 degrees for about 40 to 50 minutes. Done when knife
inserted into the middle comes out clean.SUGAR CRUSTED RHUBARB SQUARES

2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. brown sugar, packed
1 beaten egg
1 c. sour milk
2/3 c. cooking oil
1 tsp. vanilla
1 1/2 c. finely diced rhubarb
1/2 c. chopped walnuts

Topping:
1/2 c. granulated sugar
1 Tbsp. melted oleo or butter
1 tsp. ground cinnamon

Sift together flour, baking soda and salt in a bowl.
Mix in brown sugar. Combine egg, oil, sour milk and vanilla.
Add to dry ingredients, blending well. Stir in rhubarb and
walnuts. Spread batter into greased 9-inch square pan.
Combine sugar, butter and cinnamon. Mix well and sprinkle over
batter. Bake at 325 degrees for 55 minutes or until done. Makes 9
squares. Serve warm or cold.
Note: To make sour milk put 1 tablespoon lemon juice or
vinegar in bottom of measuring cup and fill to 1 cup line with
milk. Stir and allow to stand 10 minutes.

CHOCOLATE CHIP ZUCCHINI CAKE

1/2 c. oleo
1/2 c. oil
1 3/4 c. sugar
2 eggs
1/2 c. sour milk (add 1 Tbsp.
vinegar to sour milk)
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
4 Tbsp. cocoa
2 c. chopped and peeled
zucchini
1/2 c. chocolate chips

Beat oleo, oil, sugar and eggs until smooth. Add sour
milk and vanilla. Stir together flour, baking powder, baking
soda, cinnamon and cocoa. Stir dry ingredients into liquid
mixture. Add zucchini by hand and sprinkle chocolate chips on
top. Bake at 350 degrees for 40 minutes.
