Recipe: Sourdough Blueberry Pancakes
Breakfast and BrunchHi Julie:
This recipe was given to me years ago by Ruth Allman, a native Alaskan when I was still considered a Cheechako:
2 cups sourdough starter
2 T sugar
4 T oil
1 egg
1/2 tsp salt
1 scant tsp. soda; full tsp if starter is real sour
Add sugar, egg and oil to starter. Mix well. Add soda just before batter is ready to go on hot griddle. Dilute soda in 1 T of warm water. Fold gently into sourdough. DO NOT BEAT. Notice deep hollow tone as sourdough fills with bubbles and doubles in bulk. Bake on hot griddle until seal brown. Serve on hot plates.
BLUEBERRY HOTCAKES
To basic sourdough recipe add:
1 cup blueberries dusted with 2 T sugar
Let stand a few minutes; fold gently into the batter just before adding the soda.
