SPAGHETTI WITH TOMATOES AND TUNA
2 tablespoons extra-virgin olive oil
2 cloves garlic, finely chopped
1 (28 ounce) can Italian plum tomatoes with juices*
1 tablespoon tomato paste
1 sprig fresh thyme
1 (6 ounce) can tuna packed in oil, undrained
Salt and pepper
1 (16 ounce) package Barilla Spaghetti or Thick Spaghetti
2 tablespoons torn fresh basil leaves
Heat olive and garlic in large skillet over low heat until garlic begins to sizzle. Add tomatoes, tomato paste and thyme; increase heat to medium and cook, uncovered, about 15 minutes or until tomatoes have thickened.
Remove skillet from heat; stir in tuna. Add salt and pepper to taste.
Meanwhile, cook spaghetti according to package directions; drain.
Toss the spaghetti with the tuna sauce. Garnish with basil. Serve hot or at room temperature.
*For added freshness, substitute l 1/2 pounds fresh rive tomatoes, peeled, seeded and chopped, for the 28-ounce can of Italian plum tomatoes.
