SOUTHERN CHOCOLATE CAKE
"Rich and delicious."
1 (6 ounce) package semi-sweet chocolate pieces
1/2 cup butter
1 cup sifted cake flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 egg yolks
2/3 cup sugar, divided use
1/2 cup milk
1 teaspoon vanilla extract
2 egg whites
Fluffy White Frosting (recipe)
Melt chocolate and butter together; cool.
Sift together flour, baking powder, baking soda and salt.
Beat egg yolks until thick. Gradually add 1/3 cup sugar and beat until very thick. Add sifted dry ingredients alternately with milk and beat until smooth. Add cooled chocolate mixture and vanilla.
Make a meringue with the egg whites and the remaining 1/3 cup sugar. Fold into batter. Pour into two 8-inch layer pans, lined on the bottom with paper.
Bake in 375 degree F oven 25 minutes. Cool, and frost.
Makes 1 (8-inch, 2-layer) cake
