Hi Maureen. This recipe is one my mom always made when I was growing up and now I make it for my own family. It's a real favorite and is soooo quick and easy. In fact, I'm going to prepare it for dinner tomorrow. (I have a lot of leftover ham from Christmas to use up!)
Spaghetti Carbonara:
4 slices bacon (can use turkey bacon)
1/4 lb. cooked ham
1-1/2 Tbs. butter or margarine
1-1/2 Tbs. olive oil
8 oz. thin spaghetti, cooked and drained
1/3 cup freshly grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
3 Tbs. chopped parsley
Cut bacon and ham in julienne strips. Brown bacon pieces lightly in large skillet; drain on paper towels; pour off fat from skillet. Saute ham slowly in butter and oil, 4 to 5 minutes. Add hot spaghetti, reserved bacon, cheese, salt, pepper, and eggs. Toss quickly to coat spaghetti evenly and thoroughly. Sprinkle with parsley. Serve.
