Recipe: Spaghetti Sauce for approximatly 100 servings (2 recipes)

Hi Mary:

There are so many ways to make spaghetti sauce. Here are a couple of basic recipes including quantities for approximately 100 servings. HOWEVER, the number of servings will depend upon how much sauce you use for each serving. I would be tempted to make your sauce days in advance and chill it so that flavors mesh and any fats will rise to the top and can easily be removed while still cold. I would then reheat the sauce and add it to your cooked (al dente) pasta. Place our assembled spaghetti in large oven-proof pans. Top with grated cheese of your choice. You can then reheat the spaghetti and serve it from the large pans. I hope this helps.

Meaty Spaghetti Sauce
Makes 16 cups

1 pound lean ground beef
1 pound pork sausage
2 ounces sliced pepperoni sausage
1 green bell pepper, chopped
1/2 red bell pepper, chopped
1 tablespoon minced garlic
2 onions, chopped
2 carrots, diced
2 stalks celery, chopped
1 (8 ounce) can sliced mushrooms
1 (15 ounce) can tomato sauce
2 (14.5 ounce) cans diced tomatoes
2 (6 ounce) cans tomato paste
3 cubes beef bouillon cube
3 bay leaves
1 tablespoon dried thyme
1 1/2 tablespoons dried oregano
1 1/2 teaspoons dried basil
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
1 tablespoon white sugar 1 cup beef broth

In a large stockpot cook the ground beef, sausage, pepperoni, green bell pepper, red bell pepper, garlic, onion, carrots and celery. Cook until beef is no longer pink. Drain into a large colander to drain grease. To the large sauce pot, add the mushrooms, tomato sauce, tomatoes, tomato paste, bouillon cubes, bay leaves, thyme, oregano, basil, crushed red pepper, black pepper, sugar, and beef broth and stir well. Pour the meat mixture into the pot. Bring to a boil, reduce heat and cover. Simmer for 2 hours.

Ingredient Quantities for approximately 100 cups

6 1/4 pounds lean ground beef
6 1/4 pounds pork sausage
3/4 pound sliced pepperoni sausage
6 1/4 green bell peppers, chopped
3 red bell peppers, chopped
1/3 cup and 1 tablespoon minced garlic
12 to 13 onions, chopped
12 carrots, diced
12 stalks celery, chopped
6 (8 ounce) cans sliced mushrooms
6 to 7 cans (15 ounce each) tomato sauce
12 to 13 cans (14.5 ounce each) diced tomatoes
12 to 13 cans (6 ounce each) tomato paste
18 cubes beef bouillon cube
18 bay leaves
1/3 cup and 1 tablespoon dried thyme
1/2 cup and 1 tablespoon dried oregano
3 tablespoons and 1/2 teaspoon dried basil
1 tablespoon and 1/4 teaspoon crushed red pepper flakes
2 tablespoons and 1/4 teaspoon ground black pepper
1/3 cup and 1 tablespoon white sugar
6 1/4 cups beef broth

Simple Spaghetti Sauce
(approximately 8 servings)

1 (28 ounce) can stewed tomatoes
1 (28 ounce) can crushed tomatoes
1 pound lean ground beef
2 yellow onions, chopped
2 green bell peppers, chopped
5 cloves garlic, chopped
2 tablespoons white sugar
1 tablespoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste

Blend the stewed tomatoes and crushed tomatoes in a blender. In a stock pot or large kettle, brown the ground beef with the onions, peppers, garlic. Pour in tomatoes, and reduce heat. Add sugar, basil and oregano, and simmer for at least 1 hour. Season with salt and pepper before serving.

12 cans (28 ounce each) stewed tomatoes
12 cans (28 ounce each) crushed tomatoes
12 1/4 pounds lean ground beef
24 yellow onions, chopped
24 green bell peppers, chopped
60 cloves garlic, chopped
1 1/2 cups white sugar
3/4 cup and 1 teaspoon dried basil
2 tablespoons and 1/4 teaspoon dried oregano
salt and pepper to taste
