SPICED ALMOND CAKE
1 (18.25 oz.) box yellow cake mix
2 tsp. ground cinnamon
1 tsp. ground allspice
1/2 tsp. ground nutmeg
1 1/3 cups water
3 eggs
1/3 cup vegetable oil
2 tsp. pure almond extract
1/2 cup slivered almonds, chopped
Almond Glaze (recipe follows)
toasted almonds (for garnish)
Preheat own to 350 degrees F. Grease and flour a 12-cup Bundt pan.
Blend dry cake mix, spices, water, eggs, oil, and almond extract in large bowl at low speed until ingredients are moistened. Beat at medium speed for2 minutes. Fold in chopped almonds. Pour batter into prepared pan.
Bake38-43 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack 20 minutes. Remove from pan and cool completely before topping with glaze.
Drizzle Almond Glaze over cooled cake. Garnish with toasted almonds.
ALMOND GLAZE
2 tbsp. brown sugar
5 tsp. milk
2 tbsp. butter or margarine
3/4 cup powdered sugar
1/2 tsp. pure almond extract
In small saucepan over low heat, stir brown sugar, milk, and butter until butter melts and ingredients are well combined.
Remove from heat; add powdered sugar and Almond extract. Blend until smooth. Add additional milk, if necessary.
Makes 1 Bundt cake
