SPICED BEETS (using brown sugar)
1 (16 oz.) can sliced beets
1/2 cup vinegar
1/4 cup brown sugar, packed
1/2 tsp. ground cinnamon
1/4 tsp. salt
1/8 tsp. ground cloves
Drain beets, reserving liquid; set aside.
In a saucepan combine reserved liquid, vinegar, brown sugar, cinnamon, salt and cloves. Heat to boiling. Pour over beets.
Chill several hours or overnight.
SPICED BEETS (using onion and dry mustard)
1/2 cup sugar
1/2 tsp. dry mustard
1/4 tsp. ground cinnamon
6 whole cloves
4 slices onion
1/2 cup vinegar
1 (1 lb.) can beets, undrained
Mix dry ingredients together in a saucepan, then add onion, vinegar and beets. Simmer for 15 minutes.
SPICED GLAZED BEETS (using cornstarch)
1 (1 lb.) can beets, drained and sliced
1/2 cup beet juice from can
1/2 cup vinegar
1/2 cup sugar
1/4 tsp. ground cloves
1/4 tsp. ground cinnamon
1/4 tsp. salt
1 tsp. cornstarch
Drain beets, reserving 1/2 cup juice; set aside.
Simmer beet juice, vinegar, sugar, cloves, cinnamon and salt for 5 minutes.
Dilute cornstarch with a little water; add to juice mixture and cook until clear and thick. Pour over beets.
