Spicy Apricot Sauce
3/4 c. brown sugar
1 tsp. dry mustard
1 tsp. ground allspice
2/3 c. apricot nectar
4 tsp. cornstarch
3 tbsp. lemon juice
2 tsp. vinegar
Blend brown sugar, cornstarch, mustard and allspice in a small saucepan. Add apricot nectar, lemon juice and vinegar. Bring to boil and cook, stirring, for 2 minutes. Reduce heat and simmer for 10 minutes. Put over meat (chops, ham, meatloaf) and bake.
Barbecued Chops or Ribs
1 c. catsup
1/4 c. apricot nectar
1/4 c. brown sugar
2 tbsp. Worcestershire sauce
1 tbsp. lemon juice
1 tsp. salt
1 1/2 tsp. honey
1/2 tsp. prepared mustard
1/2 tsp. paprika
About 2 to 3 lb. ribs or chops
Boil ribs off for about 10 minutes and drain. Bring the other above ingredients to boil. Reduce heat. Simmer 10 minutes, stirring often. Baste on both sides, put remaining sauce over meat. Put in oven and bake at low heat (250 to 300 degrees) until done, 1 hour or so.
