SPICY BEEF AND NOODLE CASSEROLE
FOR THE MEAT SAUCE:
1 1/2 lbs. ground beef
1 (8 oz.) can tomato sauce
1 (10 oz.) can Ro-Tel Tomatoes and Green Chilies
1 teaspoon salt
1/4 teaspoon chili powder
1 teaspoon sugar
1/4 teaspoon dried basil
FOR THE CASSEROLE:
1 (8 oz.) package wide noodles
1 cup sour cream
2 teaspoons chives
1 (3 oz.) package cream cheese
1/2 cup grated Cheddar cheese (for top)
Brown beef and drain. Add tomato sauce, Rotel, sugar, salt, chili powder and basil. Cover and cook 20 minutes.
Cook noodles and drain. Line bottom of a greased shallow 2 quart casserole with 1/3 of the noodles.
Mix chives with sour cream and cream cheese. Spread 1/3 of the mixture over noodles. Cover with meat sauce. Repeat layers twice, ending with meat sauce.
Bake at 350 degrees F for 20 minutes. Sprinkle with Cheddar cheese.
Makes 6-8 servings
