Recipe: Spicy Double-Decker Tacos (serves 3-4)

SPICY DOUBLE-DECKER TACOS

1 pound ground beef
1 envelope taco seasoning mix
1 (10 oz.) can diced tomatoes and green chiles, with liquid
6 to 8 taco shells
6 to 8 small flour tortillas
1 1/4 cups grated cheddar cheese
1 1/2 cups shredded lettuce
salsa and sour cream (for serving)

In a frying pan, brown and drain ground beef.

Stir in taco seasoning and tomatoes. Cover and cook over low heat 10 minutes.

Place a flour tortilla inside each hard taco shell. Place a scoop of meat mixture into each flour tortilla. Sprinkle a small amount of cheese over meat, then put shredded lettuce over top. Garnish with salsa and sour cream.

Makes 3-4 servings
