Recipe(tried): Spicy Shrimp w/Tomato and Cilantro

This is great served on a bed of lettuce for individual portions, or on a platter with toothpicks. I have taken this to several parties, it is delicious and presents well. If you are out of time, buy frozen shrimp or some that are already peeled. Good luck!

2 cups tomato juice
1 cup clam juice
1/2 cup sherry wine vinegar
20 large cilantro sprigs
2 jalepenos, cut in half
1 teaspoon worcestershire

1 T. olive oil
2 lbs. shrimp, uncooked, peeled, deveined

1 tomato, chopped
2 gr. onions, chopped
2 Tablespoons cilantro, chopped
1t lime juice

Put tomato juice, clam juice, vinegar, cilantro sprigs, jalepenos and worcestrershire in a pan. bring to a boil, then simmer until reduced to 1 2/3 cup, about 30 min. Strain sauce into a bowl and cool

Heat oil in pan, add shrimp and cook through, about 4 min. Cool.

Add shrimp, tomato, green onion, cilantro, and lime juice to sauce. Chill at least 3 hrs. Garnish with lime wedges and additional cilantro.
