GARLIC CHICKEN SAUSAGE OVER SPINACH SKILLET
2 tablespoons olive oil
4 chicken sausages
1/2 chopped red onion
2 cloves garlic, minced
1/4 cup red wine vinegar
1 tablespoon sugar
Salt and freshly ground pepper to taste
10 ounces fresh spinach leaves (about 6 cups)
In a large skillet, heat oil over medium-high heat. Cook sausages until browned on all sides and no longer pink inside; transfer to a plate and blot with paper towels.
Add onion to the pan and saute until tender.
Stir in garlic and remove from heat. Stir in vinegar, sugar, salt and pepper. Transfer to a large bowl and toss with spinach.
Serve sausages on a mound of the dressed spinach.
