Recipe(tried): Chico's Tacos Copycat

This is as close as it gets

CHICO'S TACOS COPYCAT

3/4 lb ground beef
3 cups water, divided
1 cup chicken stock
3 whole jalapeno peppers
oil for deep frying
thin corn tortillas
Sargento Mexican cheese

Combine the ground beef, 1 cup water, chicken stock, and jalapenos in a saucepan. Boil until chili is soft. Drain meat add salt and pepper; set aside. Reserve broth in pan.

FOR THE GREEN SAUCE:
Remove the chiles and blend with a little broth, this is the green sauce.

FOR THE RED SAUCE:
Take 3 or 4 over ripe tomatoes and quarter. Add tomatoes to reserved broth and simmer for 5 minutes. Remove tomatoes and blend until smooth. Add blended tomatoes back into broth with 2 more cups of water. Simmer for 30 minutes or more. Add salt and pepper to taste.

Heat oil for deep frying.

Dip tortillas in hot oil. Fill tortillas with meat mixture. Roll, tie with butcher string, and deep fry.

Top with cheese - Sargento Mexican cheese that's shredded works very well....Enjoy
