Spinach Sausage Quiche

Serving Size : 6

1 9 inch pie crust
1/2 pound bulk sausage
1/4 cup green onion -- chopped
1 clove garlic -- minced
10 ounces package frozen chopped spinach -- cooked & drained
1/2 cup herb stuffing mix
1 1/2 cups Monterrey jack cheese -- shredded
3 eggs -- mixed
1 1/2 cups half and half cream
2 tablespoons paremesan cheese
paprika

In a skillet cook the sausage, green onion, and garlic; drain. Add the spinach and the stuffing mix. Sprinkle the Monterey jack cheese, then the sausage mixture, into the shell. In a bowl, combine the eggs and half and half; pour over the sausage, Bake in a 375 degree oven for 30 minutes. Sprinkle with parmesan and paprika. Bake 15 minutes longer or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting and serving.
