Recipe(tried): Tostada Quiche

TOSTADA QUICHE

1 9" frozen, deep-dish pastry shell
2 avocados, peeled, seeded and mashed
1 garlic clove (minced)
1/4 tsp. hot pepper sauce
1/2 lb. ground beef
1/4 cup chopped onion
3 Tbsp. lemon juice
2 1/2 cups half n half cream
2 Tbsp. taco seasoning mix
1 1/2 cups shredded cheddar cheese
3 eggs slightly beaten
1/2 teaspoon salt
1/8 tsp. pepper
Shredded lettuce, corn chips, chopped tomatoes

PREHEAT OVEN 400 degrees F. Room temp pastry shell (10 minutes). In a small bowl mix avocados, garlic and lemon juice. Stir in 1 chopped tomato, and hot pepper sauce. Cover and Refrigerate.

Bake pastry shell for 7 minutes. Remove from oven and set aside. Reduce heat to 375 degrees F. Cook ground beef, onion, and taco seasoning mix until beef is browned and onion tender. Drain. Layer cheese & beef mixture in pastry shell.

Combine eggs, half n half, salt and pepper. Beat with fork till frothy. Pour egg mixture over beef mixture. Bake 45 minutes until fork inserted comes out clean. Let stand 10 minutes before serving. Garnish with shredded tomatoes and lettuce and avocado mixture.
