Recipe(tried): Ratatouille Quiche

Ratatouille Quiche

Prepared Pastry Shell
1 T butter
1 onion; finely chopped
salt and fresh ground black pepper
1 eggplant, sliced
1 red pepper; blanched and sliced
1 yellow pepper; blanched and sliced
2 eggs; beaten
1/2 c milk
1/2 c low fat soft cheese
1/4 c cheddar cheese; grated

Melt half butter in a saucepan and gently fry onions for 5 minutes. Melt remaining butter and gently fry eggplant and peppers for 5 minutes. Arrange over
onions.

Beat eggs and milk. Gradually beat into the soft cheese. Season. Pour into pastry shell, sprinkle with cheddar cheese and bake at 375 degrees F for 35-40 minutes until golden.
