Spinach Quiche

Serving Size : 6

3 eggs -- lightly beaten
1 cup sour cream
salt, pepper, sugar
1/2 cup onion -- minced
1/2 cup pimiento -- finely chopped
1 cup swiss cheese -- shredded
10 ounces package spinach -- chopped and drained
9 inch pie shell -- unbaked
6 slices bacon -- crispy fried/crumble

In a large bowl combine the eggs, sour cream, seasonings, onion, and pimento, mixing well. Add the cheese and spinach. Pour into the pie shell and sprinkle
with the bacon. Bake in a 425 degree oven for 15 minutes. Reduce the temperature to 300 degrees and bake 30 more minutes. Note: This can be prepared in a
baked crust, but be sure the sides do not shrink.
**I did not use 1/2 cup pimento but I did use one of those very small jars of chopped pimento, drained.

This was very good and I will definitely make this again especially in these hot summer months. I served it with fresh cantalope slices and a green salad. A
keeper of a recipe!
