Recipe: Spinach-Cheese Manicotti, Spinach Manicotti (2), and Manicotti Florentine

1 (8 oz.) pkg. manicotti (14 shells)
1 (10 oz.) pkg. frozen chopped spinach
1 (32 oz.) jar spaghetti sauce
1 egg
1 (16 oz.) carton ricotta cheese
2 (8 oz.) pkgs. shredded mozzarella cheese
1/8 tsp. pepper
3/4 tsp. ground nutmeg
Cook manicotti shells in boiling salted water until just tender; drain. Rinse shells in cold water; drain well.
Cook spinach according to package directions. Drain well and squeeze dry between paper towels.
Place 1 cup spaghetti sauce in the bottom of a greased 9x13-inch baking dish.
In a bowl, beat egg. Stir in Ricotta cheese, 2 cups Mozzarella cheese, spinach, pepper, and nutmeg until well blended.
Using a table knife, fill manicotti shells with spinach mixture. Arrange in dish. Spoon remaining sauce over shells.
Bake at 350 degrees covered for 30 minutes.
Sprinkle with remaining 2 cups Mozzarella. Bake 3-5 minutes longer, uncovered.
Manicotti
Servings: 6 to 8
15 manicotti shells
1 (15 oz.) container ricotta cheese
1/2 lb. Mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
2 eggs, beaten
Dash of nutmeg
1/2 tsp. salt
10 oz. pkg. frozen spinach, cooked and drained
1 quart spaghetti sauce
Parboil manicotti shells about 3 minutes and drain.
Combine cheeses, eggs, nutmeg, salt and spinach.
Stuff shells with a spoon or your fingers.
Pour a small amount of sauce in the bottom of a 9x13-inch pan and arrange shells on top. Cover shells completely with the remaining sauce.
Bake 400 degrees for 25 minutes. Sprinkle with extra cheese if desired.
Spinach Manicotti
Servings: 5
10 manicotti shells
2 cans (6 oz. each) tomato paste
3 cups water
1/2 cup chopped onion
2 cloves garlic
1/2 tsp. dried basil
1 tsp. oregano
1/4 tsp. pepper
2 pkg. frozen chopped spinach
1 (16 oz.) carton cottage cheese
1/3 cup parmesan cheese
4 oz. grated mozzarella
Cook manicotti according to package directions. Drain and set aside.
For sauce, combine next 7 ingredients; cook over low heat 1 to 2 hours.
Cook spinach according to directions, omit the salt, drain and squeeze until the spinach is barely moist. Combine spinach, cottage cheese and parmesan.
Stuff manicotti shells with this mixture. Arrange in a greased 9x13 inch pan. Pour the tomato sauce over top and sprinkle with mozzarella.
Bake at 350 degrees for 45 minutes.
Manicotti Florentine
1 (8 oz.) pkg. manicotti shells
1 (10 oz.) pkg. frozen spinach
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
1/2 tsp. salt
dash of pepper
1 jar spaghetti meat sauce
1/4 cup parmesan cheese
Cook manicotti as directed on package and drain.
Cook spinach as directed on package and drain. Combine with the ricotta, mozzarella, salt and pepper.
Stuff each manicotti shell. Place in a greased baking dish. Pour sauce over shells.
Sprinkle with Parmesan, cover and bake at 350 degrees for 30 minutes.

In the meantime, here are three alternates - one of them may be it - they've been passed around over the years and the brand name may have been removed from the recipe.
