Recipe: Starlight Mint Surprise Cookies

STARLIGHT MINT SURPRISE COOKIES

3 1/4 cups flour
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter (softened)
1/2 cup shortening
1 cup sugar
1/2 cup brown sugar (packed)
Andes mints (broken in half)
2 eggs
Water*
1 teaspoon vanilla
Walnut halves

Sift together dry ingredients. Set aside.

Mix together butter, shortening, sugar and brown sugar. Add eggs, water and vanilla. Add sifted ingredeints. Refrigerate 1 hour.

Flour hands and shape dough around mint. Top with walnut half.

Bake 10-12 minutes at 325 degrees.

If I am going to bake the next day, I make the dough and refrigerate overnight.

*FYI the instructions include adding water but the ingredients does not list the amount. I believe it should be 2 tbsp. I have always loved these around Christmas time. - Randy Williams
