Hi again, If you want Steak and Shake style chili instead of the above, instead of ground beef use a 4 to 4.5 pound Chuck roast. If you have a hand grinder (not a food processor), take the roast and debone the roast and remove any course gristle and cut into pieces. Hand grind or have your butcher do a single course grind.
Cook the same way (this grind and cut of meat will break down giving the finer flakes of meat as well as some bigger pieces, but remember SINGLE COURSE GRIND.
Now if you want a really big treat, but not recommended for people with Heart issues, also makes a Chili dog sauce:
Take 1 beef heart and grind it fine
1/2 pound beef suet
1 small onion
1/2 clove garlic
pinch of cinnamon
2 Tbsp chili powder
Simmer, simmer, simmer. When done spoon 1 tbsp on chili. This was used on the Original Steak and Shake chili from the beginning until about the early 1970's I don't even think they have it any more.
