Recipe: Stir-Fried Peppers with Bok Choy

STIR-FRIED PEPPERS WITH BOK CHOY

1 Tbsp vegetable oil
1 Tbsp chopped fresh ginger
1 clove garlic, chopped
1 large bunch bok choy, washed, thick bottoms trimmed and sliced
1 yellow pepper, diced
1 red pepper, diced
1/4 tsp hot pepper flakes
2 Tbsp soy sauce
1 tsp sesame seeds
Hot cooked rice (for serving)

In wok or large skillet, heat oil on high. Add ginger and garlic and stir-fry for 1 to 2 minutes or until just soft.

Add remaining ingredients except sesame seeds and stir-fry for 3 to 4 minutes or until bok choy is just soft.

Remove from heat and sprinkle with sesame seeds. Serve with rice.
