Recipe: Strawberry Cake and Fresh Strawberry Cake with Cream Cheese Frosting

STRAWBERRY CAKE (USING FROZEN STRAWBERRIES)

CAKE:
1 (2-layer size) white cake mix
1 cup water
1 (10 oz) pkg. frozen strawberries, thawed and drained (reserve 1/4 pkg.)
1/2 cup vegetable oil
3 eggs
1 (3 oz.) pkg. strawberry gelatin
FROSTING:
2 to 3 cups powdered sugar (as needed)
4 tbsp. margarine or cream cheese, softened
Reserved strawberries
Preheat oven to 350 degrees F. Grease and flour 9x13-inch pan or 2 (8-inch) square pans.

CAKE:
Combine all cake ingredients except reserved strawberries; mix well. Pour into prepared pans.

Bake at 350 degrees for 25 to 35 minutes. Cool in pan(s) on rack.

FROSTING:
Combine 2 cups confectioner's sugar, margarine, and reserved strawberries. Beat with electric mixer. Add additional powdered sugar for a thicker frosting. Spread on cooled cake.


FRESH STRAWBERRY CAKE (USING FRESH STRAWBERRIES)

CAKE:
1 box (2 layer size) white cake mix
1 box strawberry Jello
2/3 cup oil
1/2 cup water
4 eggs
1 cup crushed fresh strawberries, divided
ICING:
1/2 stick (1/4 cup) margarine, softened
1/2 (3 oz.) pkg. cream cheese, softened
Dash salt
1 lb. powdered sugar, divided

Lightly grease and flour a 9x13-inch baking pan or 3 layer cake pans. Preheat oven to 350 degrees F if using 9x13-inch pan or 325F if using layer cake pans.

CAKE:
Mix cake mix and Jello until blended. Add oil and water and beat 2 to 3 minutes.

Add eggs and 2/3 cup of the strawberries; beat 2 to 3 minutes. Pour into prepared pan(s).

For layer pans bake at 325 degrees 20 to 30 minutes. For a 9x13-inch pan bake at 350 degrees for 25 minutes. Cool.

ICING:
Beat margarine and cream cheese with salt until smooth. Gradually beat in 1/2 the powdered sugar, then the remaining strawberries, then the remaining powdered sugar until smooth. Ice cooled cake.

Hi Jennine,

Here are a couple of recipes for you to check out. They have cream cheese frostings but I don't see any reason why you couldn't substitute whipped cream or Cool Whip for that. Or maybe even fold some Cool Whip into the cream cheese frosting just to lighten it.
