Recipe: Strawberry Vanilla Bread

STRAWBERRY VANILLA BREAD

1 cup corn oil (or other vegetable oil)
3/4 cup sugar
2 package (3 1/2 ounce each) instant vanilla pudding mix
6 large eggs
4 1/2 cups flour
1 1/2 tablespoons baking powder
1/2 tablespoon baking soda
4 cups frozen strawberries, thawed (reserve juice)

Preheat oven to 350 degrees F. Grease two (9x5-inch) loaf pans.

In mixer bowl combine sugar, corn oil and dry vanilla pudding mix. Mix together on medium speed.

Add eggs on low speed. Then mix on medium speed until mixture is creamy.

Combine flour, baking powder, and baking soda and add to sugar mixture 1 cup at a time on low speed, mixing thoroughly.

Add strawberries and 3/4 cup juice (add water to make 3/4 cup if necessary); mix well. Pour into prepared loaf pans.

Bake at 350 degrees for 50 to 60 minutes.
