SALMON LOAF

Here's a great alternative to everyday meat loaf! It's rich in beneficial fatty acids and contains half the amount of fat grams found in regular meat loaf.
1 can (14.5 oz) salmon
1/2 cup onion, chopped
1 small clove garlic, chopped
2 cups cracker crumbs
1/2 cup skim milk
2 eggs, separated
1 Tbsp lemon juice
1 tsp Worcestershire sauce
1/2 tsp parsley
1/2 tsp salt (optional)
Preheat oven to 375 degrees F. Coat a 9x5-inch loaf pan with PAM cooking spray.
Drain salmon liquid into saucepan. Add onion and garlic, saute until tender.
Blend together salmon, crackers, milk, egg yolks, lemon juice, Worcestershire sauce, parsley, salt, and sauteed onion mixture.
Beat egg whites until stiff and fold into salmon mixture. Spoon into prepared loaf pan.
Bake at 375 degrees for about 45 minutes.
