Recipe: Sugar Cream Cake

SUGAR CREAM CAKE

CAKE:
1 box yellow cake mix
1 stick (1/2 cup) margarine, softened
2 eggs, beaten

Preheat oven to 350F. Grease bottom of 13x9x2-inch pan very lightly.

Mix together and spread in prepared pan making sides slightly higher. Batter will be stiff.

TOPPING:
1 lb. powdered sugar
2 eggs, beaten
1 (8 oz.) pkg cream cheese, softened

Beat together topping ingredients and spoon over cake mixture in pan.

Bake at 350 degrees for 30 minutes or until light golden brown (do not overbake). Cake will rise and then fall as it cools.

Optional:
Sift powdered sugar over top of cake while it is still warm and top with 1/2 cup chopped pecans.
