Recipe(tried): SUNDAY DINNER AT OUR HOUSE

Today for lunch we had: Country Fried Steak--Alabama Style, scalloped potatoes, zipper cream peas, Cracker Barrel peach pie, pickled beets, CLAUSSEN Pickles, sliced tomatoes, broccoli cornbread, and sweet tea with lemon.COUNTRY FRIED STEAK--ALABAMA STYLE

2 lbs. round steak, cut into six pieces with fat removed
2 T. balsamic vinegar
1/2 cup red wine
2 T. chopped garlic

Pound the steak using a meat "mallet" or with a saucer until each piece is very thin. Place the pieces in a Zip-Loc Bag with the vinegar, wine, and garlic. Refrigerate overnight.

1 cup self-rising flour
2 tsps. onion powder
2 tsps. parsley flakes
1/4-1/2 cup canola or olive oilIn the morning, remove the steak from the marinade and discard the marinade. In a plastic bag, combine 1 cup self-rising flour, 2 tsps. onion powder, and 2 tsps. dried parsley flakes. Mix well. Dip each piece of steak into the flour and fry in canola or olive oil until the steak is brown on both sides. Drain on paper towels.

1 red bell pepper, sliced thinly
2 onions, sliced into rings
1 pkg. mushrooms sliced
1 large can cream of mushroom soup
1 can beef broth
1/2 cup water
2 T. chopped garlic

In my AROMA Roaster, I mixed all of these ingredients together for the gravy. Add the drained country friend steak and cook on 200 for 2 hours. Check the meat. If it is tender, serve immediately. If it isn't, increase cooking time in 15 minute intervals until it is tender.

CRACKER BARREL PEACH PIE

1 jar Cracker Barrel Peach Pie Filling
1 Pillsbury refrigerated crust
1 T. sugar
1 T. melted butter

Preheat oven to 425. Spray an 8X8" pan with PAM. Pour in the pie filling. Top with the crust and cut away the excess. Brush on melted butter and sugar. Bake for 20 minutes or until the crust is golden brown.SCALLOPED POTATOES WITH CHEESE

5-6 medium red potatoes, peeled and sliced thinly
2 Vidalia onions, sliced thinly
2 cups half and half (I used no-fat)
1/2 cup milk (I used 2%)
1/4-1/2 cup flour
1 8 oz. pkg. cheese
salt and pepper

Spray a 9X13" baking dish with PAM. In a plastic bag, coat the potatoes with the flour. Arrange the potatoes in the baking dish. Top with salt, pepper, and cheese. Mix the half and half and milk together. Pour over the potato mixture. Place aluminum foil on the top. Bake at 350 degrees for 1 hour and 15 minutes. Remove the aluminum foil and bake for another 15 minutes.
