LAYERED CHICKEN AND BROCCOLI
1 (10 ounce) package frozen chopped broccoli, thawed and drained
1 tablespoon finely chopped onion
1 clove garlic, finely chopped
1/2 teaspoon salt, divided use
Dash of ground black pepper
2 cups coarsely cut-up cooked chicken
1 (8 ounce) can sliced water chestnuts
1/2 cup sour cream
2 tablespoons milk
1 cup shredded mozzarella cheese (4 ounces)
1/4 cup grated parmesan cheese paprika
Mix broccoli, onion, garlic, 1/4 teaspoon salt and the pepper in round microwavable dish, 8 x 1 1/2-inches. Cover tightly and microwave on high 3 to 4 minutes or until vegetables are crisp-tender; stir.
Layer chicken and water chestnuts evenly on broccoli. Cover with waxed paper and microwave 3 minutes.
Mix sour cream, milk and remaining 1/4 teaspoon salt; pour evenly over water chestnuts. Sprinkle with cheeses and paprika. Cover with waxed paper and microwave on medium-high (70%) 3 to 5 minutes or until cheeses are melted.
