Recipe(tried): Sunday Dinner at Our House - Spinach Potatoes Au Gratin, Bread Machine White Bread, Alabama Sirloin, Simply Delicious Scallops

Happy Memorial Day weekend, fellow TKL friends. It's been two weeks since I posted our Sunday dinner.

On Mother's Day, Kristin cooked lunch for me and it was wonderful! Her dad was gone on a business trip so we went out for another Mother's Day last Sunday. We had delicious seafood at a small restaurant in Bagdad, FL, which is near Pensacola.

Today for lunch, I was in the mood for seafood again, but Rex wanted steak. I compromised and had both. We had: sauteed scallops, steamed shrimp, sirloin steak, Spinach Potatoes Au Gratin, zipper cream peas, corn on the cob, White Bread (ABM), cold watermelon and cantaloupe chunks, CLAUSSEN Pickles, sweet tea with lemon, and chocolate cake.

SPINACH POTATOES AU GRATIN (Microwave)
Yield: 8 servings

5 cups thinly sliced red potatoes (about 7 large)
1/4 cup water
3 tbsp. butter
1/4 cup chopped onion
1/4 cup all-purpose flour
2 cups milk
1 cup (4 oz.) shredded cheddar cheese
1 cup chopped fresh spinach
1 tbsp. sliced red pepper
1 tsp. salt
4 bacon strips, cooked and crumbled

In a 2-qt. microwave safe dish, combine potatoes and water. Cover and microwave on HIGH For 8-9 minutes or until potatoes are tender, stirring twice. Drain, set potatoes aside. In a large microwave-safe bowl, heat butter on HIGH until melted--about 30 seconds. Add onion. Microwave, uncovered, for 1-2 minutes or until tender, stirring once. Whisk in flour until blended. Gradually stir in the milk. Cook, uncovered, on HIGH for 2 1/2 minutes; stir. Cook 3-4 minutes longer, stirring every minute, or until sauce is thickened and bubbly. Stir in cheese and salt. Pour over potatoes. Add spinach and red pepper; mix well. Microwave, uncovered, on high for 2-3 minutes or until heated through, stirring once. Sprinkle with bacon.

BREAD MACHINE WHITE BREAD
1 1/2 pound

1 cup milk
1/4 cup warm water
4 tsps. butter
3 cups bread flour
4 tsps. sugar
3/4 tsp. salt
1 tsp. bread machine yeast

Add the ingredients to the machine according to the manufacturer's directions. Select the basic white bread cycle.

ALABAMA SIRLOIN

1 sirloin steak cut into three pieces
2 tbsp. olive oil
1 tsp. pepper
1 tsp. garlic powder
2 tbsp. Worcestershire sauce

In a large skillet, heat the olive oil. Add the sirloin steak pieces and season with pepper, garlic powder, and Worcestershire sauce. Cook on medium turning the steak so that both sides will be cooked. Cook until the steak is done to your liking.

SIMPLY DELICIOUS SCALLOPS

1 lb. large scallops
1 tsp. Old Bay Seasoning
1 tsp. chopped garlic
1/2 cup white wine

In a large saucepan, place the white wine. Add the scallops and sprinkle with Old Bay Seasoning. Add the chopped garlic. Cook on low for 5-10 minutes or until scallops are done.
