PUMPKIN WALNUT COOKIES
1/2 cup butter or margarine
1 1/2 cups brown sugar, packed
2 large eggs
1 cup cooked or canned pumpkin puree
1 teaspoon vanilla
1 teaspoon grated lemon peel
1 teaspoon lemon juice
2 1/2 cups all-purpose flour, sifted
3 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon ground ginger
1 cup walnuts, coarsely chopped
FOR DECORATING:
vanilla butter cream frosting
walnut pieces
candy corn
Cream butter and sugar together until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, lemon peel and juice; set aside.
Resift flour with baking powder, salt and spice; blend into butter mixture. Stir in walnuts. Drop by tablespoonfuls onto greased baking sheets 2-inches apart.
Bake at 375 degrees F for 12 to 14 minutes. Place cookies on wire rack to cool.
TO DECORATE:
Spread cooled cookies with a vanilla butter cream frosting and make "face" with walnut pieces and candy corn.
Makes about 2 1/2 dozen (3-inch) cookies
