CAKELIKE BROWNIES
3 ounces (3 squares) unsweetened chocolate
1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1 cup sugar
2 eggs
1/4 cup milk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Butter and flour a 8- or 9-inch-square baking pan.
In a small heatproof bowl set over but not touching a pot of simmering water, melt chocolate. Set aside to cool.
In a bowl, combine flour, baking powder and salt. Set aside.
In a bowl using an electric mixer on medium speed, beat butter and sugar 3 minutes until light and fluffy. Add eggs, 1 at a time, beating after each addition and continuing to beat until light and fluffy. Add milk and vanilla and beat until combined.
Reduce speed to low, add melted chocolate and mix just until completely combined. Using a spoon, add flour mixture and stir just until thoroughly incorporated. Spread batter evenly in prepared pan.
Bake 30 to 35 minutes, until a toothpick inserted in center comes out clean. Transfer pan to a wire rack; cool slightly. Cut into 2-inch squares.
