SUZANNE SOMERS' DELI PASTA SALAD
FOR THE DRESSING:
1/2 cup olive or vegetable oil
1/4 cup red wine vinegar
1 1/2 teaspoons Italian seasoning
1/8 teaspoon ground black pepper
1/2 teaspoon salt
FOR THE SALAD:
8 ounces tricolor rotini
9 ounces frozen artichoke hearts
6 ounces Monterey Jack cheese, cut in cubes
5 ounces pepperoni, sliced
1/2 head broccoli florets
1/2 head cauliflower florets
2 scallions, sliced
1 large red bell pepper, cut in 1-inch dice
lettuce leaves (for garnish)
To make the dressing, whisk together oil, vinegar, Italian seasoning, salt and pepper; set aside.
Cook pasta according to package directions.
Place artichoke hearts in colander in sink. Drain pasta over artichokes then rinse both under running cold water and drain. Add to dressing along with remaining ingredients for the salad, except lettuce; toss to coat.
Serve immediately or cover and chill to serve later. Garnish salad with lettuce.
