Recipe: Roll Cookies (cutout cookies, pastry crust dough, or dumpling covers)

ROLL COOKIES

"This dough is remarkable for its handling quality. It can be shaped into crusts and dumpling covers as well as into intricate patterns."

1/2 cup white or brown sugar
1/2 cup butter, softened
2 eggs
2 1/2 to 2 3/4 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon vanilla

Cream butter and sugar together. Beat in remaining ingredients. Chill dough 3-4 hours before rolling.

When ready to bake:
Preheat oven to 375 degrees F.

Roll out cookies, cut into desired shapes, and place on ungreased baking sheets.

Bake 7-12 minutes.

Makes about 40 (2-inch) cookies
